  • 1 container (6 oz.)   low-fat raspberry, lemon, orange or vanilla yogurt
  • 1/4 teaspoon   vanilla
  • 1/4 cup   frozen reduced-fat non-dairy whipped topping, thawed
  • 1/3 cup   Kellogg'sĀ® Cocoa KrispiesĀ® cereal
  • 1 tablespoon   flaked coconut, toasted
  • 1 cup   fresh raspberries, sliced strawberries or cut-up mango

1. In small bowl stir together yogurt and vanilla. Fold in whipped topping. In another small bowl stir together KELLOGG’S COCOA KRISPIES cereal and coconut. Set aside.

2. In two parfait glasses or dessert dishes alternate layers of yogurt mixture, raspberries and cereal mixture.

I remember the first time my oldest son ate his first rice krispie treat, he was a little over six years old. He was a sick little boy from just a baby and was unable to digest foods, when he turned 6 he went through major surgerys so that he could finally eat. When he came home from the hospital he had to have mushy stuff, we tried everything, until we found vanilla rice krispies. Vanilla rice krispies quickly became the only thing he would eat that he didn't get pain from. So one day i decided to make krispie treats, it was a day i will never forget. He sat down beside me, grabbed a piece so big he could barely hold on to and smiled from ear to ear, he had never even tasted a marshmallow before, his eyes lite up and all he could do was smile. When he was done with what est managed to eat he looked up at me and said " your the best mommy in the world, only you could make me something this good". And all I could do was smile, trying not to cry.
