Caramel Cashew Crunch Bars

  • 1 bag  (14 oz.) caramels (wrappers removed)
  • 2 tablespoons  margarine
  • 2 tablespoons  water
  • 6 cups  Cocoa Rice Krispies®
  • 1 cup  cashews
  • 1 cup  white chocolate chips divided

1. In large microwave-safe mixing bowl, microwave caramels, margarine and water at HIGH 3 minutes or until melted and smooth, stirring after each minute.

2. Add KELLOGG'S COCOA KRISPIES cereal and cashews. Stir until well coated. Add 1/2 cup white chocolate chips, stirring until combined.

3. Spread mixture into 13 x 9 x 2-inch pan coated with cooking spray. Let stand about 2 minutes. Sprinkle the remaining white chocolate chips over the mixture and press evenly into the pan. Cut into 2-inch squares when cool.

My kids are great fans of these delicious treats. I'm a baker and I work at home. I'm always trying to think of new ideas to delight the senses. One night I made a couple of batches of these treats and I cooled them off in a slanted edge pan. I love a beautiful presentation so I cut up perfect shaped treats. With 5 wonderful taste testers at home nothing is wasted. My kids woke up the next morning and pilled up into (the kitchen) one of their favorite places. Immidiately they saw the goodies. Wanting to devour them all, I made them into as many 1" squares I could get. They looked so cute. Ahhh... what a great way to get a little breakfast. I put a square on a brochette, then a strawbery, another square, a slice of banana, and another square. What better to go with this then a big glass of cold milk. I have snack day on monday for my sons faith formation class. I'm taking them these treats dipped in chocolate! :)

2. absolute failure... i followed the exact recipe and let it cool for 2hrs and when i went wrap them up, they started to crumble... next time i would add marshmallows as well. if there is a next time. kinda salty too
